Red wine from Sierras de Málaga. Red wine from Ronda.
Grape Varieties
Red wine made from Tempranillo (40%) and Syrah (60%) varieties.
Production
Once the grapes are in the tank, a pre-fermentation maceration is performed for a few days, followed by an alcohol fermentation controlled at low temperature (between 22-24ºC). The malolactic fermentation is carried out in 225 L French oak barrels with daily battonage, and once completed, the wine is aged for six months in these barrels until bottling.

Garnet color with purple iridescence in its ring, medium layer and good tears. On the nose, candied black fruit appears with red fruit sensations (blackberry), in the background spices (licorice) and dry vegetables such as (cocoa or tobacco). On the palate, it has a gentle entry, with well-integrated acidity, full-bodied and wide, leaving sensations of candied red fruit in the aftertaste with medium persistence.
After its fermentation, a bleeding was performed 8 hours after maceration, to develop an alcoholic fermentation at a controlled temperature below 18º C. Finally, lees work was done during the first month of malolactic fermentation, not allowing it to fully complete, to enhance the wine's natural acidity.
