Production
Once the grapes are in the tank, a pre-fermentation maceration is performed for a few days, followed by an alcohol fermentation controlled at low temperature (between 22-24ºC). The malolactic fermentation is carried out in 225 L French oak barrels with daily battonage, and once completed, the wine is aged for six months in these barrels until bottling.
After its fermentation, a bleeding was performed 8 hours after maceration, to develop an alcoholic fermentation at a controlled temperature below 18º C. Finally, lees work was done during the first month of malolactic fermentation, not allowing it to fully complete, to enhance the wine's natural acidity.
